Tart Lemon Cake

This used to be served at every family gathering. I still love it, just don’t have many family gatherings at my home anymore.

1 box of B Crocker lemon velvet cake mix
(if you only have yellow or white mix, then add 1 pkg lemon jello or pudding mix)

Add 4 eggs, ¾ c oil, ¾ c water, and beat 5 minutes at medium speed

Bake 350 degrees for 30 minutes. Cool 10 minutes.

While cake is still warm take a meat fork and poke cake full of large holes. Spread the following mix over the cake, letting it run into the holes:

Mix juice of two lemons with 2 cups powdered sugar.
(Juice of two lemons should be 10-12 T)

This is tart and delicious. Texture is very fine, making cake light and airy.
