Tasty Raisin Pie

Maria loves this!

2 cups seedless raisins
1/2 cup boiling water
1/2 cup sugar
1/2 teaspoon salt
2 tablespoons cornstarch
1/3 cup orange juice
1 tablespoon grated orange rind
1 tablespoon butter

Wash and drain raisins. Place in saucepan with boiling water, sugar and salt, heat to boiling. Mix paste of cornstarch and orange juice, stir into raisin mixture. Cook and stir over low heat until thick and smooth.

Line 9" pie pan with plain pie pastry and pour raisin mixture in. Moisten edges. Cut several long strips of pastry, 1 1/2" wide and flute on edge for lattice cover. Or do it the easy way and just roll pastry out, pour raisin mixture in the middle and fold pastry over the raisins. Sprinkle with sugar and cook just like a pie until golden.
