Faux Swedish Pancakes

This was used by a family for special occasions--not sure why they call it faux. But I tried it and like it and enjoy having it on Sunday evenings. Use an electric skillet.

4 large eggs
2 cups sour cream
¼ cup cake flour (I use regular)
3 Tablespoons sugar
½ teaspoon baking soda
½ teaspoon salt
Oil or nonstick cooking spray for griddle

In a mixing bowl or blender lightly beat the eggs. Add the remaining ingredients and combine thoroughly.

Heat a griddle or frying pan, lightly greasing it with oil or cooking spray. Drop the batter by small spoonfuls to make 1 ½ inch pancakes. When a` few bubbles appear on top of the pancakes, turn them and cook until browned.

Serve hot with syrup or jam and milk or powdered sugar and lemon. I especially like Swedish Lingonberry Preserves.
