Spanish Rice

When Richard and I were first married, we ate this a lot! It was easy and cheap and always had left overs (Richard loved to find things in the fridge to eat). I still like to have it and sometimes even without the bacon as a side dish.

Serves 6

6 slices bacon
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
2 cups canned tomatoes
1 cup uncooked rice
1 t salt
1/8 t pepper

Fry bacon until crisp. Remove bacon. Pour off all the fat except about 2 T. and brown onions and peppers. Meanwhile cook rice until tender. Mix rice with bacon, onions and peppers and add tomatoes and salt and pepper. Bake in greased casserole in 350 degree oven for 30 minutes. If desired, 1/4 c grated cheese may be sprinkled over top for last few minutes of baking.
